Ingredients
- 2 C FLOUR
- 1 1/2 C SUGAR
- 1 t BAKING SODA
- 1/2 t SALT
- 1/2 T CINNAMON
- 3 EGGS
- 1/2 C OIL
- 1 t VANILLA
- 2 C CHOPPED MANGO
- 1/2 C CHOPPED DATES
- 1/2 C CHOPPED WALNUTS OR MACADAMIA NUTS
Preparation
Step 1
IN LARGE BOWL, COMBINE 1ST 5 INGREDIENTS. IN ANOTHER BOWL, BEAT EGGS, OIL AND WALNUTS. STIR INTO DRY INGREDIENTS JUST UNTIL MOISTENED. FOLD IN MANGOES, DATES AND NUTS (BATTER WILL BE STIFF). SPOON INTO 2 GREASED 8X4" LOAF PANS. BAKE AT 350* FOR 50-55 MINUTES OR UNTIL DONE. COOL FOR 10 MINUTES BEFORE REMOVING FROM PANS TO COOL.
