Chicken and Mushrooms

Ingredients

  • 4 Boneless chicken breasts
  • 3 Eggs, well beaten
  • 1 ½ cup Bread crumbs
  • Cooking oil
  • 8 oz Sliced mushrooms
  • 1 ½ cup Chicken broth
  • 1 cup Tomato juice
  • 1 tsp Lemon juice
  • 8 oz. Muenster cheese sliced

Preparation

Step 1

1. Between wax paper pound chicken flat.
2. Soak chicken in beaten eggs for several hours even over night.
3. Roll Chicken in bread crumbs
4. Sauté mushrooms in oil for 1 minute and set aside
5. Saute chicken in oil until lightly browned. Drain. Place in baking pan with mushrooms.
6. Heat oven to 350.
7. Mix broth, vegetable juice and lemon juice
8. Pour over chicken
9. Cover with cheese
10. Bake 25 – 30 min.
