Tomato Pie 350 D

Ingredients

  • 1 (9in.) pie shell
  • 7 ripe tomatoes, sliced
  • 1 yellow onion (optional)
  • 2 thin sliced potatoes
  • 3/4 cup mayonnaise
  • 1/3 c. shredded mozzarella cheese
  • 1/3 c. grated Parmesan cheese
  • 1-2 slices bacon chopped
  • ground black pepper to taste
  • 2 tsp. fresh basil
  • 2 tsp. fresh oregano

Preparation

Step 1

Preheat oven to 350 D

Bake the pastry shell for 8 to 10 min's or until browned

Slice potatoes (or onion) and place in the bottom of the pastry shell. Slice tomatoes and arrange over potatoes. Add black pepper to taste.

In medium bowl, combine mozzarella, parmesan and mayo. Spread this mixture evenly over tomatoes


Bake at 350 D for 20-25 minutes or until golden brown.

Once cooked garnish with fresh herbs.

I've made this several times and have tweaked it. I pre-bake my crust a bit longer, sprinkle cheese to the bottom of the pre-baked crust and then add spinach leaves so crust doesn't get to soggy. Pre-drain tomatoes well.
I lined a dish with a couple of flour tortillas instead of a pie crust.
