Roasted Cod Fillets with Crispy Potatoes and Lemon

Ingredients

  • 1 1/2 pounds russet potatoes
  • 5 tablespoons butter
  • 3 garlic cloves
  • Fresh thyme sprigs
  • 4 6 ounce skinless cad filets
  • 1 lemon

Preparation

Step 1

1. Slice potatoes into1/4 inch slices

2. Combine with2 tablespoons of melted butter, minced garlic, t teaspoon of minced thyme, salt and pepper

3. Shingle potatoes into 4 X 6 rectangular piles on parchment paper and roast at 425 for 30 minutes

4. Pat cod dry and season with salt and pepper. Toss in 3 tablespoons of melted butter. Place a sprig of thyme, cad, then lemon slice on the potatoes.

5. Bake for 15 more minutes.
