Grilled Potato Wedges with Fresh Herb Pesto

Ingredients

  • 4 medium sized potatoes, cleaned, thickly sliced
  • 1/4 cup finely chopped fresh herbs: parsley, rosemary, thyme, basil
  • 4 large cloves minced garlic
  • 1/4 cup olive oil

Preparation

Step 1

Place slices in a steamer for 5 mins. until tender. Set on a paper towel. Blend together remaining ingredients. Grill potatoes 2-3 mins. per side until golden. Top with fresh herb pesto.
