Ingredients
- 4 c baby red potatoes cut in small pieces
- 1/2 c green pepper finely diced
- 1/4 c red onion finely diced
- 3 scallions diced
- 1 t dijon mustard
- 1 T xtra virgin olive oil
- 1 T red wine vinegar
- 1 T reduced fat or light mayo
- salt and pepper
Preparation
Step 1
boil potatoes in salted water until soft about 10 mins
drain and let cool
while potatoes boil, combine onion, green pepper, mustard, olive oil venegar and mayo and season with salt and pepper
mix well and let the flavors marinate while potatoes cook
once the potatoes are done and cool mix in with potatoes and add scallions and salt & pepper to taste
serve at room temp or chill till ready to serve
