Grilled Southwest Loaded Potatoes

Ingredients

  • 6 large baking potatoes
  • 1 1/2 cups frozen corn, drained
  • 1 cup black beans, drained and rinsed
  • 1/2 cup chopped roasted red peppers
  • 1/2 cup ranch dressing
  • 3 green onions, sliced
  • 1/4 tsp. chili pepper
  • 1/2 cup mozzarella cheese, shredded
  • chopped chives

Preparation

Step 1

Trim a small slice from both ends of each potato to allow them to stand upright. Cook in microwave on high until fork-tender, about 8 mins. Cool. Slice in half cross-wise. Hollow out halves, leaving a 1/2" thick shell. Mash potato. Fold in corn, beans, red peppers, ranch dressing, green onions and chili pepper. Spoon filling into shells. Preheat barbecue to medium-low and oil grill. Cook potatoes with lid down for 10 mins. Sprinkle with cheese and cook until melted, 3-4 mins. Sprinkle with chives and serve.
