Ingredients
- Dressing:
- 1 Lemon
- 2 T. white wine vinegar
- 1/3 c. sugar
- 1 T. vegetable oil
- 1 t. poppy seeds
- Salad:
- 1/2 medium cucumber
- 1/4 sm. red onion
- 1 bag (6 oz) fresh baby spinach leaves
- 8 oz. fresh strawberries (quartered)
- 1/4 c. sliced almonds, toasted
Preparation
Step 1
Zest lemon to measure 1/2 t. Juice lemon to measure 2 T. Combine zest, juice, vinegar, sugar, oil, and poppy seeds in small bow, whisk until well blended.
Slice cucumber. Cut slices in half.
Place spinach in large serving bowl. Add cucumber, onion, strawberries and dressing. Toss gently. Sprinkle with almonds and serve immediately
