Ingredients
- 1/4 red onion
- 9 oz pkg cheese ravioli
- 1 tbl olive oil
- 1 tbl lemon juice
- 1 garlic clove
- 1/2 tsp lemon zest
- salt and pepper
- 1/2 cup cherry tomatoes
- 1/4 cup oil cured olives
- parsley
Preparation
Step 1
Thinly slice the red onion and soak in ice water, 20 minutes, then drain.
Grate garlic clove. Halve cherry tomatoes. Chop olives Chop parsley.
Cook cheese ravioli as package directs. Drain and rinse under cold water.
Whisk olive oil and lemon juice, grated garlic clove, lemon zest and salt and pepper in a large bowl. Add the ravioli, onion, cherry tomatoes, olives and parsley. Toss to combine.
