Ingredients
- 36 small bay scallops,shucked and cleaned
- 1/4 cup(60 ml) sliced red onion
- 1 mango,peeled,seeded,and cut into 1/2 inch cubes
- 1 pint(400g)ripe cherry tomatoes
- 1 small jalapeno pepper,seeded,and minced
- 4 stalks green onion,sliced on a bias
- 1 tsp fresh minced ginger
- 1 tbsp passion fruit puree,or the pulp of 2 fresh passion fruits
- 1/4 cup(60 ml)extra virgin olive oil
- sugar,to taste
- salt and pepper,to taste
- 1 large lime
- 12 sprigs fresh cilantro
Preparation
Step 1
Combine all ingredients except the lime and cilantro in a large non-metallic bowl.If scallops are large,cut them in half.
Wash and dry the lime.With a microplane zester or fine grater,grate the lime zest over the seviche.Cut the lime in half and squeeze the juice on.Toss the seviche thoroughly and marinate for 1 hour.
Roughly chop half of the cilantro and stir it into seviche.Divide the mixture among 6 glasses and garnish each glass with a spring of cilantro or plantain chip.
