Ingredients
- 3 eggs
- 1 Tbl canola or olive oil
- 1 onion, minced
- 3/4 pound chopped uncooked bacon
- 2 tablespoons red wine vinegar
- 1 tbl Dijon mustard
- 1 tbl dark brown sugar
- 1/2 tsp. black pepper
- 1 tbl. salt
- 1 pound fresh baby spinach, washed and chilled
- 1 avocado, diced
- 1/2 lemon, juiced
Preparation
Step 1
In small saucepan, cover eggs with water and bring to a boil Remove pan from heat and cover for 10 minutes. Peel eggs and set aside.
In large saute pan over medium heat, saute onions and bacon until bacon is crisp. Stir in vinegar, mustard, sugar, black pepper and salt and cook for 1 minute. Set aside and keep warm.
In large serving bowl add spinach, avocado and lemon juice. Season with salt and pepper to taste. Cut eggs into quarters and add to the bowl. Ladle desired amount of dressing on salad and serve.
