Amy's curried coconut rice

Ingredients

  • chicken breasts, cubed and cooked til done.
  • 1-8 oz can pineapple tidbits with juice
  • 1/4 c shredded coconut
  • 2 T brown sugar
  • 1 tsp jerk seasoning
  • 1/2 t ground cinnamon
  • pinch chili powder
  • pinch crushed red pepper flakes
  • Salt and pepper
  • Cooked rice or noodles

Preparation

Step 1

Cook chicken in olive oil. Add remaining ingredients except rice and simmer for 10 minutes. Serve over rice or noodles
