Shrimp Salad

Ingredients

  • 1 lb cooked baby shrimp
  • 1- 16 oz package of tiny peas
  • 1 can of chinese noodles (5 oz)
  • Unsalted cashews to taste
  • 1 cup of celery
  • 3 green onions, chopped
  • 1 cup of mayo (can substitute yogurt)
  • 1 tbsp. lemon juice
  • 1 tsp. curry powder

Preparation

Step 1

Mix all ingredients except cashews and noodles. Refrigerate for 30 minutes. When ready to serve, add cashews and noodles.

Delicious served over honeydew.
