Stuffed Chicken Breast

Ingredients
- Chicken Breast Strips
- Smoked Gouda Cheese
- Baby Spinach
- Scallions
- Garlic
- Butter
- Mushrooms
- Salt & Pepper
- Cheyenne Pepper
- Bacon Strips

I did not include measurements because its all dependent on how much you want to make...Preheat oven to 375 degrees.
While oven is preheating, start out by dicing spinach, garlic cloves, mushrooms (I use cremini), and scallions. Combine those in mixing bowl. Second, chop gouda cheese into 1/4 inch chunks and put into same mixing bowl. Finally, include soften butter into bowl and mix together. I make sure the cheese is the most abundant ingredient.
Pound chicken breast strips so that the chicken is about a 1/4-1/2 inch thick. Season both sides of chicken with salt, pepper and cheyenne pepper. Then place stuffing mixture in center of each chicken breast and roll into a cylinder shape. Finally wrap chick breast with 1 strip of bacon each. To ensure the stuffing mixture doesn't leak entirely out, it would be wise to either tie off the ends with baking string, or close them off with toothpicks.
Bake chicken for about 25 mins, and if you want to crisp the bacon, broil for an additional 2-3 min.
