Shrimp Paprika

Ingredients

  • 1 lb raw, peeled, deveined shrimp
  • 2 Tbls margarine or butter
  • 3/4 tsp salt
  • 1/2 tsp paprika
  • 1/4 tsp cayenne pepper
  • 1/8 tsp black pepper
  • 1/4 cup chopped green onion tops
  • 1/3 cup heavy cream or half and half
  • 1 1/2 tsp Dijon mustard
  • 2/3 cup sour cream
  • 2 cups rice (cooked)
  • Parsley for garnish

Preparation

Step 1

Cut large shrimp in half. In a (10 inch) frypan, melt margarine; add shrimp, salt, paprika, cayenne pepper, and pepper. Cook shrimp until they begin to turn pink; add onions, heavy cream, and mustard. Stir in sour cream. Heat thoroughly, stirring occasionally. Serve over hot, cooked rice. Garnish with parsley.
