Ingredients
- garnish:
- 2 tsp olive oil
- 1 small yellow onion, diced
- 1 garlic clove, minced
- 1 lb ground turkey
- 1 28oz can diced tomatoes
- 1 each: green and sweet red pepper diced
- 1 zucchini, diced
- 1 540 ml can rinsed and drained black bean
- 1 540 ml can rinsed and drained red kidney beans
- 1 can corn nibblets drained or 1 1/2 c frozen
- 1 tbsp. chili powder
- 1 tsp cumin
- 1/2 c cheddar shredded
- 1/4 c sour cream
Preparation
Step 1
Heat the oil in a medium skillet over medium to high heat. Add the onion and garlic, stirring until slightly soft, about 4 minutes. Add the turkey and cook until no traces of pink remains, crumble the turkey with the back of a spoon 7 minutes. Add the tomato in with the juice, beans, peppers and spices
Bring to a boil. Reduce heat and simmer for about 15 minutes, taste add salt and more spiced if needed stir and enjoy.
Serve with the cheese, sour cream and nachos on the side.
