Beth's Spinach Stuffed Mushrooms

Ingredients

  • 1 1/2 lbs. medium mushrooms
  • 1 10 oz. pkg. frozen chopped spinach, thawed
  • 1/2 8 oz. pkg. cream cheese, softened
  • 2 tsp. minced onions
  • 1/4 tsp. salt
  • 1 tsp. lemon juice
  • 2 drops hot sauce
  • 6 slices bacon, cooked and crumbled

Preparation

Step 1

Clean mushrooms with damp paper towels. Remove stems. Cook spinach, drain and press dry. Combine with next 5 ingredients. Stir 2/3 of bacon into spinach mixture. Spoon into mushroom caps.

Arrange on a microwave safe platter. Cover with heavy-duty plastic wrap-fold back a small edge to allow steam to escape.

Microwave at medium-high (70% of power) 7 minutes or until mushrooms are thoroughly heated- giving dish a half-turn at 4 minutes. Sprinkle with remaining bacon.

May be made ahead of time and refrigerated until cooking time.
