Beth's Oriental Shrimp and Pasta Salad

Ingredients

  • 1 1/2 pounds baby shrimp, peeled and deveined
  • 3/4 pound linguine, cooked al dente and drained
  • 1 bunch green onions, chopped
  • 2 cup water chestnuts, rinsed, dried and sliced
  • 1/4 cup sesame seeds, toasted
  • 3 cups sliced radishes
  • 1/4 pound snow peas, blanched for 30 seconds and refreshed
  • 1 tablespoon minced fresh ginger
  • 1 tablespoon minced garlic
  • 1/4 cup sesame oil
  • 1/4 cup sake
  • Juice of 3 oranges
  • 2 tablespoons honey
  • 2 tablespoons white vinegar

Preparation

Step 1

First, prepare the dressing. Saute the ginger and garlic in the sesame oil, add the sake, and reduce by half over high heat. Add remaining ingredients and again reduce by half.
Blanch shrimp in boiling water for 1 minute, refresh with cold water, and drain thoroughly. Combine with remaining ingredients and gradually add the dressing, tossing gently, until mixture is well coated.
