Ingredients
- 1/4 c poppy seed dressing
- 1/4 c vanilla Greek yogurt
- 2 baguettes, split
- 1 c arugula leaves, divided
- 2 c coarsely shredded rotisserie chicken breast, divided
- 1 cup sliced fresh strawberries, divided
- 1/2 c sliced red onion, divided
- 1/4 c walnuts, divided
- 1/4 fresh basil leaves, thinly sliced, divided
Preparation
Step 1
In a small bowl combine poppy seed dressing and yogurt.
To assemble sandwiches, spread cut sides of baguettes with poppy seed mixture. On bottom slice of each, layer one-half of arugula leaves, chicken, strawberry slices, red onion slices and walnuts; sprinkle with basil. Add top bread slice to each. Cut each loaf diagonally in half for serving
