Mom's Frozen Cucumber Pickles

Ingredients

  • 2 quarts cucumbers, sliced thin but not peeled
  • 1 medium onion, sliced
  • 2 tbs Kosher salt
  • 1 1/2 cups sugar
  • 1/2 cup vinegar

Preparation

Step 1

In a large bowl, mix cucumbers, onion and Kosher salt. Cover. Let stand in refrigerator 2 hours. Drain but do not rinse.

Add sugar and vinegar. Pour over cucumber slices and mix thoroughly. Place in various size containers. Divide juice evenly among containers. Seal and label. Place in freezer. Can be kept for months.
