Lentil Soup

Ingredients

  • 2 cartons (32 oz each) vegetable broth
  • 1 lb dry lentils
  • 1-1/2 c. chopped onion
  • 1-1/2 c. chopped baby carrots
  • 1 c. chopped celery
  • 1/4 c. EVOO
  • 2 T. minced garlic
  • 2 t. Italian seasoning

Preparation

Step 1

Coat slow cooker with nonstick cooking spray. Add all ingredients to slow cooker and stir to combine. Cook on low for 7-8 hours, or 3-4 hours on high.
