Ingredients
- 2 lbs. broccoli florets
- 4 T. olive oil
- salt and pepper to taste
- 4 T. unsalted butter
- 2 t. minced fresh garlic
- 1 t. lemon zest
- 2-3 T. fresh lemon juice
- 1/4 c. toasted pine nuts
Preparation
Step 1
Preheat oven to 500 degrees. Toss broccoli with oil, salt and pepper in large bowl. Arrange florets in a single layer on a baking sheet and roast, turning once for 12 minutes or until just tender. Meanwhile melt butter in small sauce pan. Add garlic and lemon zest and heat stirring for about 1 minutes. Let cool slightly and stir in lemon juice. Place broccoli in serving bowl, pour lemon butter over it and toss to coat. Scatter with toasted pine nuts over top.
