Ingredients
- 4 lb pork butt
- 1 large onion chopped
- 4 carrots chopped
- 1/2 celery chopped
- 1 large leek chopped
- 1 can plum tomatoes
Preparation
Step 1
make rub of rosemary, garlic and thyme and apply to pork butt.
sear pork in dutch oven in a small amount of sunflower oil. Take out and set aside.
soften chopped vegetables in dutch oven.
add pork but back into dutch oven and add can of plum tomatos and 60 cc of pork stew juice and cook for 4 hours at 275 degees
