Salmon Eggs Benedict (Nancy's recipe)

Ingredients

  • sourdough English muffins
  • smoked salmon
  • baby spinach
  • cream cheese, softened
  • 1/4 cup red onion, chopped
  • 1/4 cup chives, chopped
  • 4 egg yolks
  • eggs
  • kosher salt

Preparation

Step 1

Spread:
Add about 1/4 cup each of red onion and chives to cream cheese. Add a little kosher salt.

Hollandaise:
Melt one stick of butter. Let sit for a few minutes. In blender add 4 egg yolks, pinch salt, juice of one half lemon, 1 tsp grey poupon, dash hot sauce. Blend for a little while. Slowly add butter.

Assembly:
Put English muffins in oven on low. Make the hollandaise so it has time to sit and thicken. Make cream cheese mixture while eggs are poaching in heavy pan with vinegar added to water.

Layer cream cheese, baby spinach, salmon, poached egg and sauce.
