Eggplant Dressing with Shrimp

Ingredients

  • 1 large eggplant, peeled
  • 1 large onion, minced
  • 1 cup celery minced
  • 1 large bell pepper, minced
  • 6 cloves garlic, minced
  • 1 1/2 lb diced shrimp
  • 1/2 cup cooking oil
  • 2 cups cooked rice
  • 1 cup bread crumbs
  • seasoning to taste

Preparation

Step 1

Cut eggplant into pieces and steam in 1/2 cup water until tender. Saute minced celery, bell pepper, onion and garlic until tender. Add shrimp and cook until done. Add rice and boiled eggplant and liquid and mix thoroughly.Season to taste. Sprinkle with bread crumbs and place in oven for 5-10 minutes at 350 degrees.
