Ingredients
- 2-4 California asparagus spears, blanched
- 1/2 cup white balsamic vinaigrette (recipe follows)
- 1 tablespoon fleur de sel
- 1/4 cup tomato, diced
- 1/4 cup micro arugula (see note)
- Note: Micro arugula, which is smaller than baby arugula, is available at Specialty Produce, 5254 Lovelock St., Morena are: www.specialtyproduce.com
Preparation
Step 1
Lightly grill the asparagus. Place the asparagus on a platter. Drizzle the vinaigrette over and around the asparagus. Sprinkle the fleur de sel over the asparagus, followed by the tomato. Garnish with micro arugula.
