Creamy Lemon Bars

Ingredients

  • Crust:
  • 4 c. Vanilla wafers
  • 1/3 c pecans (finely chopped)
  • 1/3 c. Butter (melted)
  • 1 Tbsp sugar
  • Filling:
  • 2 packages (8oz) cream cheese, softened
  • 1/4 c. Sugar
  • 1 egg
  • 1 lemon

Preparation

Step 1

Preheat oven to 350 degrees. Finely chop wafers and pecans with food chopper. Set aside 1/2 cup. Combine wafers, nut, and butter in 2 quart bowl. Press onto bottom of 9x13" baking dish. Combine cream cheese, sugar and egg in bowl. 1 Tbsp of lemon zest. Juice 3 Tbsp juice. Add zest and juice to cream cheese mixture. Spread mixture over crust. Sprinkle with remaining crust. Bake at 20-25 minutes or until set. Cut into bars and serve.
