Ingredients

  • 16 oz bow tie pasta, cooked
  • 2 Tbsp olive oil
  • 1/2 cup wine vinegar
  • 1/2 cup mozzarella cheese (4 oz)
  • 1 cup snow peas, cut in 1/2 lengthwise
  • 1 large sweet red pepper
  • 1 large yellow pepper
  • 1 carrot chopped
  • 1/2 large purple onion, cut into rings
  • 1 large red tomato, diced
  • 1/4 cup finely chopped parsley
  • 1/4 cup coarsely chopped fresh basil
  • fresh ground black pepper

Preparation

Step 1

1. Cook pasta, drain.
2. In small bowl, combine oil, vinegar, and mozzarella cheese and whisk briskly.
3. Combine pastra, vegetables, herbs, and dressing in large bowl and toss gently until alla re combined. Top with ground black pepper.
