Miss Kay's Sweet Potato Pie

Ingredients

  • 3 cups mashed cooked sweet potato
  • 2 cups sugar
  • 6 eggs
  • 1 1/2 tsp cinnamon
  • 1/2 tsp nutmeg
  • 1/2 tsp salt
  • 1 stick softened butter
  • 1 can (12 oz) evaporated milk
  • 1 1/2 tsp vanilla
  • 1 Pie Crust

Preparation

Step 1

Heat oven 350'. To get 3 cups of mashed sweet potatoes,boil about 2 1/4 pounds whole sweet potatoes with the skins on for about 40 minutes. Drain, let cool until you can handle them, and remove the skins. Mash potatoes in a large mixing bowl. Let them mostly cool. Beat in the sugar, eggs, cinnamon, nutmeg, salt, butter, milk and vanilla. Pour into the unbaked pie crusts.
Bake for 10 minutes, then reduce the oven heat to 300'. Bake for 45-50 minutes more, until the filling is set and no longer wobbly in the center.
