Banana Bread

Ingredients

  • 1/4 pound margarine
  • 1 c. Sugar
  • 2 eggs leaving out 1 yolk
  • 1 tsp baking soda
  • 1 tsp salt
  • 1 and 1/2 c. Flour
  • 1 c. Mashed bananas (very ripe)
  • 1/2 c. Cottage cheese
  • 1 tsp vanilla

Preparation

Step 1

Preheat oven to 350 degrees. Grease pans. With mixer cream margarine and sugar until light and fluffy. Add the eggs, beat well. Mix dry ingredients together then combine with margarine mixture in mixer. Blend well and add bananas, cottage cheese, and vanilla. Mix well and pour into pans. Bake for 1 hour or until tester comes out clean.
