Cranberry Walnut Tart

Ingredients

  • Filling:
  • 2 cup flour
  • 1/4 cup sugar
  • 1/4 tsp. salt
  • 1 cup unsalted butter
  • 1 egg yolk
  • 1 tsp. vanilla extract
  • 3/4 cup sugar
  • 1/2 cup light corn syrup
  • 1/4 cup dark corn syrup
  • 3 eggs
  • 3 tbsp unsalted butter
  • 3/4 tsp grated orange rind
  • 1 1/2 cup walnut halves and pieces
  • 1 1/2 cup fresh cranberries

Preparation

Step 1

In a large bowl, combine flour, sugar and salt. Cut in butter until mixture look like coarse meal. Add egg yolk and vanilla, blend until mixture forms a ball. Press into an 11 inch round tart or quiche pan. Refrigerate for one hour.
Heat oven to 375°F; bake tart shell for 15 minutes.
Prepare filling. In a large bowl, combine sugar, both corn syrups, eggs, butter and orange rind. Place walnuts and cranberries in bottom of tart shell. Pour sugar mixture over walnuts and cranberries. Bake tart at 375° degrees 25-30 minutes or until golden brown and filling is firm.
