Peach Soup

Ingredients

  • 3 C peeled, chopped fresh peaches (about 4 medium)
  • 1 C vanilla yogurt
  • 1 tsp lemon juice
  • 1/8 - 1/4 tsp almond extract
  • Toasted sliced almonds
  • Fresh mint, opt.
  • Sugar to taste - white or brown

Preparation

Step 1

Blend all ingredients until smooth in a blender; refrigerate until chilled; serve with almonds and mint, if desired
