Ingredients
- 2 cans (6 ounces each) albacore tuna
- 2 1/2 cups cooked cannellini (white kidney) beans, or 2 12-ounce cans, rinsed and well drained
- 1 pint cherry tomatoes, cut in half
- 3 ribs celery, peeled of their strings and sliced
- 1/8 - to 1/4-inch thick
- 3 green onions, cut into 1/8-inch slices,
- including tender green parts
- 1/4 to 1/2 cup extra-virgin olive oil
- Juice of 2 lemons
- Salt and freshly ground pepper, to taste
- Lettuce for salad
Preparation
Step 1
Drain the tuna well and place it in a
bowl. Add beans to the tuna with the remaining ingredients. Toss well. Serve on lettuce. Serves 8
