Lemony Shrimp Salad

Ingredients

  • 2 pounds large shrimp, peeled and
  • deveined
  • 4 cups green grapes, halved
  • 6 radishes, thinly sliced and cut into
  • 1/8 inch dice
  • 1 cup "light" mayonnaise
  • 1/2 cup sour cream
  • 1/4 cup finely chopped fresh dill
  • Finely grated zest of 2 lemons
  • 2 tablespoons fresh lemon juice
  • Salt and freshly ground black pepper to taste
  • Radicchio.or watercress for garnish
  • Whole sprigs of dill, for garnish

Preparation

Step 1

1. Bring a large pot Of water to a boil. Add shrimp and cook for 1to 2 minutes or until just cooked through but not cooked. Taste to test. Drain, run under cold water and pat dry. Place shrimp in a bowl with grapes and radishes.
2. In another bowl, mix mayonnaise, sour cream, dill, lemon zest and juice, salt and pepper. Add to shrimp mixture and toss well, Refrigerate, covered, for, at .least 4 hours before serving for flavors to develop.
3. To serve, line a platter with radicchio leaves or watercress. Mound shrimp salad in the center and garnish with dill.
