Roasted Tomatoes

Ingredients

  • 6 Roma tomatoes cut in 1/2 inch pieces
  • 1 T balsamic vinegar
  • 2 t brown sugar
  • 1 clove garlic, minced
  • 1 T EVOO
  • 1 T butter
  • 1 red onion, finely diced
  • 1/2 c water
  • 1/4 c red wine
  • 1 T tomato paste
  • 1/4 c chopped fresh parsley
  • 8 basil leaves

Preparation

Step 1

Place tomatoes in baking dish.
Combine balsamic vinegar, brown sugar, garlic and EVOO and pour over tomatoes

Cook uncovered in 400F oven for 50 minutes or until tomatoes are browned and softened.

Remove tomatoes from dish. Melt butter in dish and add red onion. Cook until softened. Return tomatoes to dish. Stir in water, red wine and tomato paste. Bring to a boil and simmer uncovered about 10 minutes.

Stir in fresh parsley and basil leaves.
