Ingredients
- 3 Tbsp seasoned rice vinegar
- 1 tsp. Asian sesame oil
- 1 tsp. fresh lime juice
- 1 tsp. fish sauce
- 1 1/2 lbs cucumbers; sliced in half lengthwise
- 1/4 cup torn basil
- 1/4 cup coarsely chopped salted peanuts
Preparation
Step 1
Whisk first 4 ingredients in a large serving bowl. Scoop the seeds out of the cucumbers and slice diagonally into 1/4" thick crescents. Add the cucumbers, basil and peanuts to the vinaigrette, toss and serve.
