Clam Chowder

Quick Chowder. Always good served with crusty bread and a salad.

Ingredients

  • 6 strips bacon, diced
  • 1/2 c. finely chopped onion
  • 2 cans (10-3/4oz each) condensed cream of potato soup undiluted
  • 1 1/2 c. milk
  • 3 cans (6-1/2oz each) minced clams, undrained
  • 1 tbsp lemon juice
  • 1/4 tsp dried thyme
  • 1/4 tsp pepper
  • minced fresh parsley

Preparation

Step 1

In a large saucepan, cook bacon over medium heat until crisp; remove to paper towels. Drain, reserving 1 tbsp drippings. In the drippings, saute onion until tender. Stir in soup and milk. Add clams, lemon juice, thyme, pepper and bacon. Heat through. Garmish with parsley
