Bacon and Blue Cheese Russet Potatoes

Ingredients
- 3 pounds of russet potatoes
- 6 slices of bacon
- 3/4 cup of whole milk
- 1 stick unsalted butter
- salt and pepper
- 4 ounces crumbled blue cheese
Preparation
Step 1
Boil 3 pounds of russet potatoes.
Cook 6 slices bacon until crisp. Crumble and set aside in bowl
Drain potatoes and mash with 3/4 cup whole milk and 1 stick of unsalted butter cut-up
Season with salt and pepper
Fold in the bacon and top with 4 ounces crumbled blue cheese
