Ingredients
- 1 lb raw shrimp
- 1/2 cup dry white wine
- salt and pepper
- 1/4 tsp red pepper flakes
- 2 tbsp plus 4 tsp flour
- 1/2 cup finely chopped parsley
- 1/3 cup olive oil
- 1/2 cup peas cooked or defrosted
- 1/4 cup chopped green onions
- 1 tbsp finely chopped garlic
- 1/4 cup fish broth or clam juice
Preparation
Step 1
1. Peel and devein shrimp but leave the tails on.
2. Sprinkle with S&P and coat with 2 tbsp flour.
3. Heat oil in a skillet large enough to hold the shrimp in one layer.
4. Cook shrimp for 45 seconds on each side. Transfer them to another skillet.
5. To the oil remaining in the skillet whisk in the remaining flour. Add the scallions and garlic. Stir in the fish broth and wine. Cook over moderate heat, stirring often for ~ 1 minute. Add in red pepper flakes.
6. Add the parsley and stir to blend.
7. Spoon the sauce over the shrimp and add the peas. Bring to a boil. Simmer about 2 minutes.
