Ingredients
- 1 medium onion, chopped
- 2 garlic cloves, finely chopped
- 3 TBSP extra virgin olive oil
- 1/2 tsp red hot pepper flakes
- 1/2 tsp ground cinnamon
- 1/4 tsp ground allspice
- 1 28 oz can chopped tomatoes and juice
- pinch of sugar
- 1 1/4 lb large peeled and deveined shrimp
- 1/4 + lb feta, crumbled (~ 2/3 cup)
- 2 TBSP chopped dill
Preparation
Step 1
Preheat oven to 375
Cook onion and garlic in oil with ¼ tsp salt in 4 qt saucepan over medium heat until softened,~ 5minutes
Stir in spices and cook stirring, 30 seconds
Add chopped tomatoes and sugar. Simmer uncovered until slightly thickened ~20 minutes. Remove from heat.
Season shrimp with 1/8 tsp salt then stir into tomato sauce. Transfer into a 2 quart shallow baking dish and top with feta. Bake until cooked through ; 18-20 minutes.
Serve sprinkled with dill.
