Rhubarb Custard Cake

When the rhubarb is in season this is a very easy recipe to make.

Ingredients

  • 1 pkg (18 1/4 oz) yellow cake mix
  • 4 c rhubarb fresh or frozen
  • 1 cup sugar
  • 1 c whipping cream

Preparation

Step 1

Prepare cake mix according to pkg directions. Pour into a greased 13 x 9 pan. Sprinkle with rhubarb and sugar. Slowly pour cream over top. Bake at 350 for 40 to 45 minutes or until golden brown. Cool for 15 minutes before serving. Garnish with whipped cream.
