Ingredients
- 1 cup canned black beans
- 1/2 medium sweet onion
- 1/2 medium bell pepper
- 2 Roma or plum tomatoes
- 1 tablespoon olive oil
- 1 cup chopped fresh pineapple
- 1/2 teaspoon salt-free Caribbean or Mexican seasoning blend
- 1/4 cup chopped fresh cilantro
Preparation
Step 1
Rinse and drain beans; set aside. Coarsely chop onion, pepper and tomatoes. Heat oil in a skillet over medium. Add onion and pepper and saute until tender, 2 to 3 minutes. Add tomato, pineapple and seasoning; saute 2 minutes. Add beans and cilantro and cook until beans are heated through, 1 to 2 minutes.
Active time: 10 minutes.
Total time: 10 minutes.
