Black Bean, Corn & Quinoa Salad

Easy to modify, just add any crisp veggie you have on had. Also nice for a light dinner a bed of greens
vegan dish

Ingredients

  • 1 c of water or veggie broth
  • 1/2 c quinoa, well rinsed
  • 1 t olive oil
  • 2 t lime juice
  • 1/4 t ground cumin
  • 1/8 t cayenne pepper
  • 1 T chopped fresh cilantro
  • 1/4 c chopped green onions
  • 1 15 oz can black beans, rinsed and drained
  • 1 ear fresh corn, cooked, kernels removed
  • 1 small tomoato, chopped (apx 3/4 cup
  • 3/4 chopped bell pepper
  • 2 T canned diced green chilies
  • 1 c chopped fresh mango or peach
  • lime wedges

Preparation

Step 1

1. In a saucepan, bring water or broth or boil. Add quinoa, cover and simmer on low heat until water is absorbed, 10-15 minutes. Cool

2. In a small bowl , combine olive oil, lime juice, cumin, cayenne, scallions and cilantro. In a large bowl, combine cooled quinoa, green oinions, beans, cor, tomato, bell pepper green chilies & mango or peach. Add olive oil mixture and toss gently. Season with salt and pepper. Cover and refrigerate until cool. Serve with lime wedges.
