Stuffed Baked Tomatoes

Ingredients

  • 2 large ripe summer tomatoes
  • 1 cup small curd cottage cheese
  • 1/4 cup finely chopped fresh basil, spinach, or arugula
  • 2 crushed garlic cloves
  • 1/2 cup grated Parmesan cheese

Preparation

Step 1

1. Preheat oven to 400F.
2. Cut tomatoes in half horizontally.
3. Combine remaining ingredients; stir gently. Divide evenly among 4 tomato halves. Bake 15 minutes or until hot and browned.

Serves 4.
