Zucchini Patties

Good as a side dish or even in a sandwich with lettuce, tomatoes and onions.

Ingredients

  • 3 Tbs. Vegetable Oil
  • 3 Cups Zucchini, peeled and shredded
  • 3 Large Eggs
  • 1 Cup Cheddar Cheese, shredded
  • Salt and Pepper
  • 8-10 Slices Velveeta Cheese (optional)

Preparation

Step 1

Heat oil in a large skillet over medium high heat. Stir the zucchini, eggs, cheddar and salt & pepper to taste together in a large bowl. Drop the batter by tablespoons into the skillet. As the batter begins to thicken, shape it into patties using a metal spatula and fry until golden brown, about 3 minutes on each side. Top with a slice of Velveeta if desired.
