Ingredients
- 2 cups kumquats (1/4" slices)
- 1/2 cup unsweetened cranberry juice
- 2 cups fresh or frozen cranberries
- 1 1/2 cups sugar (or substitute)
- salt and pepper to taste
Preparation
Step 1
Place kumquat slices, cranberry juice and cranberries in large pot with enough water to barely cover. Add half the sugar. Cover and boil until all cranberries are popped. Reduce heat, taste for sweetness and flavor, adding more sugar, if desired; season with salt and pepper. Cover and simmer about 10minutes to allow flavors to blend. Remove from heat and let cool. Refrigerate before serving.
