Ingredients
- 2 tablespoons lard
- 1 1/2 tablespoons finely chopped garlic
- 4 teaspoons finely chopped white onion
- 2 cups cooked black beans
- 1/2 teaspoon canned chipolte Chile, pureed
- 2 tablespoons chopped mint
- 4 ounces goat cheese
- 1/3 cup heavy cream
Preparation
Step 1
To prepare bean:
In heavy bottomed, non stick pan, melt lard over medium-low heat, Saute garlic and onion about 10 minutes, or until tender and cooked through. Drain beans and mash to rough puree. Mix with chipolte, salt and mint. Add to pan Constantly flip in pan, like an omelet, and occasionally scrape bottom of pan to keep beans from sticking. Cook for about 10 minutes, or until beans become dark, dry and crusty. Turn beans out of pan like an omelet, rolling out in one piece.
To serve. Mix goat cheese and heavy cream together until smooth. Top each serving of beans with cheese mixture.
