Apricot Glazed Chicken

Ingredients

  • 1/4 cup low-sodium soy sauce
  • 2 tbsp vegetable oil
  • 2 tbsp cider vinegar
  • 2 cloves garlic, minced
  • 1 tbsp fresh ginger, minced and peeled
  • 1/4 tsp each salt and black pepper
  • 1/4 tsp crushed red pepper flakes
  • 2/3 cup apricot jam
  • 4 bone-in chicken breast pieces

Preparation

Step 1

Whisk together soy sauce, vegetable oil, vinegar, garlic, ginger, salt, red pepper and apricot jam to make marinade. Place chicken in a resealable plastic bag; pour marinade over chicken. Marinate in the refrigerator for at least one hour. Remove chicken from marinade. Grill chicken approximately 6 minutes each side, basting with leftover marinade until the chicken reaches an internal temperature of 165. Refrigerate any leftovers.
