Peach Pie

Ingredients

  • Pastry dough for 2-crust 9-inch pie
  • 7 cups peeled and sliced I.M. RIPE peaches
  • 2/3 CUP PIUS 1 tablespoon sugar
  • 1/4 cup tapioca
  • 3 tablespoons flour
  • I tablespoon lemon juice

Preparation

Step 1

Preheat oven to 375 F.

Roll out half of pastry dough and place in a 9-inch pie pan.

Mix peaches, 2/3 cup sugar, tapioca, flour and lemon juice in a large bowl. Pour into the pastry-lined pie shell.

Roll out remaining dough and place over the filling. Seal the edges. Cut slits in the top. Sprinkle lightly with remaining 1 tablespoon sugar.

Place foil over the top and bake for 25 minutes. Remove foil and bake for another 35 minutes, or until the juices bubble and the crust is a deep golden brown. Makes 8 servings.
