Potato Stew

Ingredients

  • Stew:
  • 2 T olive oil
  • 2 T minced garlic
  • 9 oz bag fresh spinach
  • 28 oz can diced tomatoes
  • 16 oz bag corn
  • 1/2 t oregano
  • salt and pepper to taste
  • 1 t fresh basil
  • 1 pkg shredded potatoes
  • 1/4 c chopped parsley
  • Parmesan cheese
  • Side:
  • French bread
  • butter

Preparation

Step 1

In saucepan heat oil adding garlic. cook approximately 1 min. Stir in spinach, tomatoes, corn, oregano, basil, salt and pepper. Increase heat to medium, bring to simmer and cook about 5 minutes. Stir potatoes into tomato mixture, add parsley. Heat for 10 15 minutes more. Serve topped with parmesan cheese.

Serve with French bread and butter.
